Gilroy Bruschetta
The Gilroy Garlic Festival has been going strong since 1979 and continues to be one of the most popular festivals in California. Garlic is a great addition to many recipes and has been rumored to help prevent the common cold. It certainly can’t hurt! Makes 6 servings.

Ingredients
8 Roma tomatoes
4 tablespoons olive oil
2 tablespoons fresh basil, chopped
3 cloves garlic, finely chopped or pressed
1/2 cup fresh Romano cheese, shredded salt and pepper to taste
1 French bread baguette, sliced into 1/4" rounds

Directions
Lightly toast bread rounds on both sides under broiler until golden. Set aside. Combine tomatoes, oil, basil, garlic and cheese. Spread a spoonful of mixture on each bread slice. Garnish with one perfect whole basil leaf and serve.
