Crema de Frijoles Ceam of black bean soup from Paul Ryan that takes very little time to prepare.
Makes two to three good servings.
Ingredients
One can low sodium black beans
About ¼ cup each sautéed in olive oil:
Yellow or white onion
Green or red bell pepper
Celery
Carrot
One clove minced garlic sautéed with the vegetables
Ground black pepper
Cream or half and half
Directions Heat the beans (undrained) in a soup pot. Add the sautéed vegetables. Simmer for about twenty minutes. Puree in a blender or food processor. Return to pot and add about a half cup of cream or half and half. Reheat but don’t boil. Serve with sour cream, finely diced tomatoes, avocado, cilantro, diced chilies, and warm corn tortillas or tortilla chips.
