Crema de Frijoles
Ceam of black bean soup from Paul Ryan that takes very little time to prepare.
Makes two to three good servings.

Ingredients

  • One can low sodium black beans
  • About ¼ cup each sautéed in olive oil:
  • Yellow or white onion
  • Green or red bell pepper
  • Celery
  • Carrot
  • One clove minced garlic sautéed with the vegetables
  • Ground black pepper
  • Cream or half and half

 

Directions
Heat the beans (undrained) in a soup pot. Add the sautéed vegetables. Simmer for about twenty minutes. Puree in a blender or food processor. Return to pot and add about a half cup of cream or half and half. Reheat but don’t boil. Serve with sour cream, finely diced tomatoes, avocado, cilantro, diced chilies, and warm corn tortillas or tortilla chips.
